This course is for acidified foods manufacturers. It meets the FDA and ADPH requirements for commercial acid and acidified foods production (pickles, salsa, jelly, BBQ sauce, et.) This two-day course covers an introduction to acidified foods, measuring pH, Microbiology, Good Manufacturing Practices, Sanitation, Thermal Processing, Record Keeping, Shceduled Process and Container closures. The fee for the course and book is $350. Please register 1 week prior to class.
