Modern milling takes whole grains and sends them through a complex, multi-step process of separating, sifting, extracting, chemically treating, aka “enriching” to create a shelf stable, highly processed ingredient we call “flour”. Is there a better way? Home cooks are rushing to buy home grain mills and learning to bake with fresh milled flour. Learn about milling history, fresh milled flour, how it can impact nutrition and how to bake using fresh milled flour. You will see two methods of home milling demonstrated and a batch of bread from start to finish.
